The grapes come from steep, south-facing hills near Valdobbiadene. The yield is 13 tons of grapes per hectare.

Winemaking

The grapes are only gently pressed and then undergo temperature-controlled fermentation. This Prosecco is produced using the Charmat method. The second fermentation therefore takes place in large tanks. This process takes 25 to 30 days. After that, it remains in the domain's cellars for another 1 to 3 months in the bottle. It receives a dosage of 8 grams per liter.

Bortolomiol ligt in de heuvels ten noorden van Treviso, in het historische hart van de Proseccoproductie. De steile wijngaarden rond Valdobbiadene vormen samen met meer dan 250 jaar opgebouwde kennis de basis voor verfijnde mousserende wijnen. Hoewel Prosecco vaak wordt geassocieerd met massaproductie en hoge rendementen, bewijzen producenten als Bortolomiol dat de streek ook bijzonder hoogwaardige bubbels voortbrengt. De beste wijngaarden behoren tot de DOCG Conegliano Valdobbiadene Prosecco Superiore, het oorspronkelijke kerngebied waar Glera optimaal tot zijn recht komt. Hier gelden strengere voorschriften rond herkomst, rendement en persing dan binnen de veel ruimere Prosecco DOC.
