The grapes come from a vineyard in a moraine formed by the melting of the Mérande glacier. It contains clay and limestone sediments, as well as thin, fragmented layers of clay originating from the Kimmeridgian period. The yield of the 70-year-old vines in this biodynamically cultivated vineyard is 40 hl per hectare.
Vinification
The grapes are harvested manually. Upon arrival at the winery, the bunches are destemmed. The co-fermentation and maceration take 10 days. The 18-month aging process takes place in oak barrels, a quarter of which are new. The natural vinification occurs without the addition of yeasts or sulfites.

Château de Mérande ligt op de historische hellingen van Arbin in de Savoie en bezit 12 hectare wijngaarden, waaronder prestigieuze percelen zoals Le Paradis en Les Terrasses de Lourdens. De absolute hoofdrol is weggelegd voor Mondeuse, de iconische druif van de streek. Oude wijnstokken, sommige meer dan 50 jaar oud, leveren geconcentreerde wijnen met veel karakter, frisse zuren en een uitstekend bewaarpotentieel. Daarnaast maken ook Roussanne, Gamay en de zeldzame Altesse deel uit van het domein.
