Vineyard
The vineyard is located in Chaintres, in the hamlet of Les Dares. The soil, dating from the Turonian, consists of calcareous clay. The orientation is due south, which ensures the grapes quickly reach full ripeness. The soil is ploughed to improve aeration. The yield is 35 hl per hectare.
Vinification
The grapes are hand-picked and transported in small crates to the winery. Once there, the grapes undergo a second selection. Fermentation takes place in wooden vats and is followed by a long maceration of 22 to 24 days. Malolactic fermentation occurs in round 25 hl Stoeckinger wooden vats. Finally, the wine matures for 12 months in large 25 hl foudres.

Domaine des Roches Neuves
Frankrijk · Loire
