Vineyard
The grapes come from vineyards classified as Vertus Premier Cru and also from several Premier Cru plots just outside Vertus. The vines are over 40 years old and thrive on a soil of chalky-clay and chalk. The plots are oriented south, southeast, or east.
Winemaking
The grapes are hand-picked and lightly pressed upon arrival at the winery. Spontaneous fermentation, initiated by indigenous yeasts, is followed by 7 months of aging on the lees, with 75% of the juice in stainless steel tanks and 25% in small oak barrels. Only a very limited amount of sulfites is added during vinification. The blend consists of three consecutive vintages, supplemented with 20% reserve wines. This Champagne receives no dosage and contains no residual sugar.

Veuve Fourny & Fils is een echt familiedomein waar al vijf generaties lang Champagne wordt gemaakt. Na het vroege overlijden van hun vader namen Charles en Emmanuel Fourny begin jaren negentig stap voor stap het huis over, nadat hun moeder Monique Van Landeghem het domein jarenlang had verdergezet. Vandaag vormen de broers een perfect duo: Emmanuel staat in voor de wijnbouw en vinificatie, terwijl Charles zich toelegt op de commerciële uitbouw van het huis.
