Appeal - Côte des Blancs: Vertus
Vineyard
The grapes come from vineyards classified as Vertus Premier Cru and also from some Premier Cru plots just outside Vertus. The vines are over 40 years old and thrive on a soil of chalky loams and chalk. The orientation of the plots is south, southeast, or east.
Winemaking
The grapes are hand-picked. They undergo a gentle pressing upon arrival at the winery. The fermentation, which starts spontaneously with indigenous yeasts, is followed by a 7-month maturation on the lees, with 75% of the juice residing in stainless steel tanks and 25% in small oak barrels. Only a very limited amount of sulphites is added during vinification. The blend consists of three consecutive vintages, supplemented with 20% reserve wines. This Champagne receives no dosage and contains no residual sugar.
