Appeal - Côte des Blancs: Vertus
Vineyard
Most of the grapes come from vineyards classified as Vertus Premier Cru. Furthermore, the Chardonnay grapes also come from some Premier Cru parcels just outside Vertus. The vines are on average around 40 years old and thrive on a terroir of chalky loam and chalk. The orientation of the parcels is South, Southeast, or East.
Winemaking
The grapes are hand-picked. They undergo a gentle pressing upon arrival at the winery. The spontaneous fermentation initiated by indigenous yeasts is followed by a 7-month maturation on lees, with 75% of the juice residing in stainless steel tanks and 25% in small oak barrels. Only a very limited amount of sulfites is added during vinification. The blend consists of three consecutive vintages supplemented with 20% reserve wines. The dosage is 6 grams per liter.
