The grapes come exclusively from vineyards classified as Vertus Premier Cru. The vines are on average about 50 years old and thrive on a terroir of chalky silt and chalk. The plots face South, Southeast, or East.
Winemaking
The grapes are hand-picked. They undergo a gentle pressing upon arrival in the winery. The fermentation, which starts spontaneously with indigenous yeasts, is followed by an 18-month aging on the lees in small oak barrels. The blend consists of two consecutive vintages, each representing 50%. The dosage is only 0.75 grams per liter. It ages for 4 years sur lie in the domain's cellars.
