Vineyard
The grapes come exclusively from vineyards classified as Vertus Premier Cru. The vines are on average around 50 years old and thrive on a terroir of chalky soils and chalk. The plots are oriented South, Southeast, or East.
Winemaking
The grapes are hand-picked. They undergo a light pressing upon arrival at the winery. The spontaneous fermentation by indigenous yeasts is followed by 18 months of aging on lees in small oak barrels. The blend consists of two consecutive vintages, each represented by 50%. The dosage is only 0.75 grams per liter. It ages for 4 years sur lies in the domain's cellars.
