Vineyard
The grapes for this Crémant come from various plots totalling 4.87 hectares. They are spread across the clay and limestone slopes in Wettolsheim and the sandy and silty flat vineyards in Turckheim and Colmar. The vines have an average age of 30 years, leading to a yield of 55 hl per hectare. There are an average of 5,000 vines per hectare.
Winemaking
The grapes are picked much later than is usual for making a Crémant. This means that chaptalisation is not necessary. After harvesting and pressing, the first fermentation starts in stainless steel tanks, exclusively driven by indigenous yeasts. This fermentation is prematurely stopped by cooling the juice when there are still 23 grams of residual sugar per litre. This is sufficient to start the second fermentation in the bottle. During disgorgement, only still wine is added to compensate for the loss of volume in the bottle. It therefore receives no dosage and contains less than half a gram of residual sugar per litre.

Domaine Barmès-Buecher ontstond in 1985 uit het huwelijk van Geneviève Buecher en François Barmès, waarmee eeuwenoude familiewijngaarden werden samengebracht. Al van bij de start stond werken in harmonie met de natuur centraal. In 1998 schakelde het domein officieel over op biodynamische wijnbouw en drie jaar later was de volledige 18 hectare gecertificeerd. Voor Sophie en Maxime Barmès is biodynamie geen techniek, maar een voortdurende zoektocht waarbij observatie, ervaring en respect voor de natuur de belangrijkste instrumenten zijn.
