Vineyard
Most of the grapes come from vineyards classified as Vertus Premier Cru, supplemented with other Premier Cru and Grand Cru plots. The vines are on average about 30 years old and thrive on a terroir of chalky loam and chalk. The parcels are oriented south, southeast, or east.
Winemaking
The grapes are picked by hand. They undergo a gentle pressing upon arrival at the winery. The spontaneous fermentation by indigenous yeasts is followed by 7 months of maturation on lees. Only a very limited amount of sulphites is added during vinification. The blend consists of three consecutive vintages supplemented with 40% reserve wines stored in small oak barrels. The dosage is 6 grams per litre.
