Vineyard
Most of the grapes come from vineyards classified as Vertus Premier Cru, supplemented by other Premier Cru and Grand Cru plots. The vines are on average around 30 years old and thrive on a terroir of chalky loam and chalk. The plots are oriented south, southeast, or east.
Winemaking
The grapes are hand-picked. They undergo a gentle pressing upon arrival at the winery. The fermentation, which starts spontaneously due to indigenous yeasts, is followed by a 7-month maturation on lees. Only a very limited amount of sulfites is added during vinification. The blend consists of three consecutive vintages, supplemented with 40% reserve wines stored in small oak barrels. The dosage is 6 grams per liter.

Champagne Fourny & Fils
Frankrijk · Champagne
