Vineyard
The soil of this 15-hectare vineyard consists of granite and pebbles and is characterized by its high acidity. 70-year-old vines grow on it. The combination of this poor soil and old vines results in low yields. Work in the vineyard is carried out biodynamically, without the use of pesticides and insecticides.
Vinification
The hand-picked grapes undergo a double selection: only perfectly ripe and healthy grapes are used. Semi-carbonic maceration takes 10 to 21 days. No sulfites or yeasts are added during this process. The wine matures for 9 months in old 216-liter Burgundy barrels. The wine is bottled unfiltered.
