Vineyard
The grapes come from the Centive vineyard in the village of Fontanile. This plot was planted in the 1970s. The soil has a whiter colour than their Barbera vineyards. The soil consists of a good mix of sand and marl, and also contains a large proportion of white limestone.
Winemaking
After a short cold maceration on the skins of only a few hours, the must is separated. This is followed by fermentation in small stainless steel tanks at a cold temperature. During this process, the wine develops its mousse; no CO2 is added. To stop the fermentation prematurely, the must is cooled and undergoes micro-filtering before bottling, which happens just 2 months after the harvest.
