Vineyard
The grapes come from the 170-meter-high plateau in Schafleiten. The soil here consists of sandy loam and limestone with a large amount of gravel. The St-Laurent vines are 28 years old and yield 30 hl per hectare. The Pinot Noir, at 38 years old, is a bit older and yields 35 hl per hectare.
Winemaking
The clusters are pressed immediately upon arrival at the winery. The 7-day fermentation in stainless steel tanks starts spontaneously and naturally due to indigenous yeasts. This sparkling wine was bottled when there were still 20 grams of residual sugar per liter. Once in the bottle, fermentation continues naturally, ultimately resulting in a Pet Nat with 3.5 grams of residual sugar per liter. After 6 months in the bottle, it is disgorged.
