The grapes come from approximately twenty-year-old vineyards in the Vale Dom Pedro valley. Due to the natural vigour of the Baga grape, yields remain balanced and the grapes develop a distinctly fresh acidity. The Atlantic climate ensures slow ripening and a refined aromatic profile. This combination results in an elegant sparkling rosé with great precision and tension.
Winemaking
The grapes are hand-harvested and gently pressed as whole bunches to achieve a refined rosé color and delicate aromas. Fermentation takes place in a combination of stainless steel tanks and used oak barrels, beautifully blending freshness and complexity. In February, the blend is created, after which the second fermentation occurs in the bottle according to the traditional method. The wine then ages for at least 18 months *sur lattes* before disgorgement.
