Vineyard
The grapes come from old vines on the high-altitude and steep slopes of the Ramadas vineyard. The soil consists of granite and shale.
Winemaking
The grapes are destemmed and then immediately undergo a gentle pressing. After static clarification, fermentation begins. This temperature-controlled process takes place between 14 and 15 °C. The bottles are already filled before fermentation is completely finished. Once bottled, fermentation resumes naturally. It remains here for 5 months before being released unfiltered onto the market. It contains no residual sugar. The annual production is 4,000 bottles.
