The grapes come from carefully selected plots in Bairrada, where the cool Atlantic climate ensures slow ripening and vibrant acidity. The combination of Bical, Baga, and Cercial provides a perfect balance of freshness, structure, and finesse. Thanks to the maritime influence, the grapes retain their aromatic precision and minerality. The vineyards form the basis for a sparkling wine with great depth and exceptional aging potential.

Winemaking

The grapes are harvested by hand during the cool morning hours and gently pressed as whole bunches. The base wine ferments entirely in oak barrels and ages for approximately six months on its fine lees for added structure and complexity. Since 2007, a Solera system has been used, whereby approximately 30% of the blend is replaced annually with the latest vintage. The second fermentation takes place in the bottle according to the traditional method, followed by a minimum of 18 months of aging sur lattes before disgorgement.

Vadio, gevestigd in het pittoreske dorpje Poutena in de Bairrada-regio, is een familiebedrijf dat in 2005 werd opgericht door Luís Patrão. Geïnspireerd door de rijke tradities van de regio, zette Luís zich in om de verloren gegane inheemse druivensoorten nieuw leven in te blazen en authentieke DOC Bairrada-wijnen te produceren. Hun verhaal begon bescheiden, met slechts 0,5 hectare familiewijngaard, maar is sindsdien uitgegroeid tot een gerespecteerd wijnhuis, dat trouw blijft aan zijn oorsprong en de waarden van duurzaamheid en respect voor de natuur hoog in het vaandel heeft.
