Ingredients

Serves 4

Cuttlefish

  • 1 cuttlefish, ± 1.2 to 1.5 kg (cleaned)
  • 120 ml mild extra virgin olive oil
  • fine sea salt

Broth

  • 2 red onions, coarsely chopped
  • 3 cloves garlic, crushed
  • 2 celery stalks, cut into pieces
  • stems from ½ bunch parsley
  • 2 bay leaves
  • 3 sprigs thyme
  • trimmings and tentacles from the cuttlefish
  • 80 g pitted black olives
  • 10 g seaweed
  • 150 ml dry sparkling wine
  • 1.2 liters cold water

Ink Cream

  • 200 g sour cream
  • cuttlefish ink
  • 1 dash Sambuca
  • dash of broth
  • salt & pepper

Thyme Oil

  • 250 g thyme
  • 350 g neutral oil (e.g. grapeseed oil)
  • pinch of salt

Furthermore

  • caviar of choice
  • 100 ml neutral olive oil
  • 1 sprig thyme
  • 250 ml broth
  • 3 sheets gelatin
  • focaccia
  • edible flowers
