The grapes come from the oldest, historic plots of the Sanz family and their friends, with vines averaging between 80 and 100 years old. These plots are located on the Castilian plateau at an altitude of about 750 meters in a temperate continental climate. The soil is extremely poor, consisting of sandy loam with a very dense top layer of pebbles and a deep limestone layer. Verdejo vines grow here in the traditional 'vaso' training system (bush vines close to the ground). The yields from these old vines are minuscule, which ensures the immense concentration and high natural alcohol content needed to protect the wine during its decades in the barrel.

Winemaking

The grapes are harvested by hand with extreme selectivity into small crates. After pressing, alcoholic fermentation starts spontaneously with indigenous yeasts in open oak barrels. After fermentation, the wine undergoes a full, spontaneous malolactic fermentation on its lees. What makes this wine unique is the subsequent aging of at least 10 to 12 months, divided among three different elements: a portion ages in large French oak barrels (500 and 600 liters), a portion in large oak foudres (1,200 to 3,000 liters), and a portion in handmade clay amphorae (tinajas) of various sizes. Finally, the wine rests in the bottle for several months before release.

De drijvende kracht achter Bodegas Menade is de familie Sanz. Sinds het begin van de 19e eeuw verbouwen ze wijn in Rueda. De 6e generatie wijnbouwers van deze familie is in 2005 met een nieuw project gestart: Bodegas Menade. Ze fungeerden hierbij als pioniers in de organische wijnbouw in Rueda. Het natuurlijke aspect is voor hen heel belangrijk en dit gaat verder dan enkel het wijngebeuren, het is een echte filosofie waarvan het ganse team op Bodegas Menade van doordrongen is. Er wordt maximaal gerecycleerd, de energieconsumptie zit op een minimaal niveau en zelfs het glas van de flessen is op een ecologische manier geproduceerd. Door hun grote succes is er wat financiële ruimte gecreëerd en dit wordt gebruikt om steun te bieden aan goede doelen en sociale projecten in hun streek. Maar ze kijken ook wat verder: ze hebben steun verleend na de verwoestende aardbeving in Haïti en ze helpen bij de stroomvoorziening in arme regio’s in Zuid-Amerika.
