The Nebbiolo grapes come from the 1.89-hectare Sottocastello di Novello vineyard, situated at the foot of Castello di Novello. The plot faces South/Southeast and lies 450 meters above sea level. There are approximately 5,000 vines per hectare, yielding 5.5 tons per hectare. The 15-year-old vines grow in a soil of white-grey marl and clay; higher up the hill, we find more sand and sandstone, and the color evolves from dark grey to yellow towards the top.
Vinification
Around 25 to 30% of the bunches are not destemmed. Fermentation starts spontaneously through the indigenous yeasts. This process takes 15 to 20 days and is temperature-controlled. This is followed by a 25 to 30-day maceration. Finally, the wine matures for 24 months in large wooden barrels, followed by 12 months of aging in concrete tanks. It is bottled unfiltered. The annual production is around 9,000 bottles.
