Vineyard

The 17-hectare vineyard is located on a high terrace. The soil consists of a mix of old sandstone, a deep gravel layer, and blue clay. Most of the vines are between 30 and 40 years old. There are approximately 5,700 to 7,150 vines per hectare.

Vinification

The bunches undergo a very strict selection, followed by a classic vinification where fermentation takes place in 48 oak barrels of 500 liters and in stainless steel tanks. During maturation, a small portion of the juice goes into six 500-liter baked clay tanks (Pino Parisi from Tuscany), produced according to Roman traditions from 2000 years ago. The rest of the wine is matured in new French oak barrels.
