Vineyard
The organically grown grapes come from high-altitude vineyards (at about 520 meters above sea level). The soil, which is rich in manganese, consists mainly of granite that has evolved through natural processes and erosion into a sandy soil with good water permeability. There are about 5,000 vines per hectare.
Vinification
The grapes are hand-picked and are followed by a second selection upon arrival at the winery. Around three-quarters of the bunches are destemmed. Maceration and fermentation together take 20 days, during which the pigeage technique is applied. The wine matures for 11 months in large conical wooden vats of 50 hl and large foudres.

Al generaties lang bewerkt de familie Pothier de wijngaarden rond Villemontais, in de Côte Roannaise. Door de jaren heen groeide het domein uit van slechts 2 hectare tot 21 hectare onder leiding van Romain Pothier. Naast een grondige modernisering van de kelder schakelde hij het domein om naar biologische en later ook biodynamische wijnbouw, met respect voor de natuur en het omliggende landschap.
