Vineyard
The grapes come from a vineyard in a moraine formed by the melting of the Mérande glacier. It contains clay and limestone sediments, as well as thin, crumbled layers of clay originating from the Kimmeridgian. The yield of the very old vines in this biodynamically cultivated vineyard is 40 hl per hectare.
Vinification
The grapes are picked manually. Upon arrival at the winery, the bunches are destemmed. Vinification begins with a cold maceration, followed by co-fermentation and maceration. This process takes 3 months and occurs in 500-litre barriques. The subsequent 18-month aging takes place in the same barrels. Natural vinification and bottling proceed without the addition of yeasts and sulfites.

Château de Mérande
Frankrijk · Savoie
