Vineyard
The Merlot and Cabernet Sauvignon grapes come from different parcels. The Cabernet Franc grapes come from the Capriva vineyard, which, at 50 meters, is their lowest and also warmest vineyard. The terroir is 'Flysch di Cormons', also known as 'Ponca', which was formed some 50 million years ago. The soil, primarily marl supplemented with clay and limestone, and also containing layers of sandstone, was formerly the ocean floor. As a result, there is little organic material present. The roots are therefore forced to search for their nutrients very deep in mineral-rich layers. The vineyards are cultivated sustainably.
Vinification
The grapes for this cuvée are harvested last. Part of the Merlot grapes are allowed to dry out a little first. All grapes undergo a 10 to 15-day maceration. After a classic fermentation, the wine matures for 12 months in large wooden barrels. Finally, the wine matures for another year in bottles in the domain's cellars.
