Vineyard
The grapes come from vineyards in La Chapelle, Beine, Fontenay, and Villy. The vines are between 20 and 50 years old. The soil originates from the Late Jurassic period. The organically farmed vineyards are located on slopes from the Kimmeridgian and the Portlandian plateau, and consist mainly of clay and limestone.
Winemaking
Vinification occurs entirely with the help of gravity. Fermentation takes place in stainless steel tanks and is initiated by indigenous yeasts. The wine ages for 12 months in stainless steel tanks. No sulfites are added during vinification or bottling.

Domaine de l'Enclos werd in 2016 opgericht door de broers Romain en Damien Bouchard, maar hun wijnverhaal begon al veel vroeger in het familiebedrijf. Na jaren ervaring en een eerste eigen project besloten ze hun droom waar te maken met een zelfstandig domein. Vandaag beheren ze bijna 30 hectare wijngaarden, waaronder enkele prestigieuze Grand Cru- en Premier Cru-percelen in Chablis.
