Vineyard

The grapes come from vineyards in La Chapelle, Beine, Fontenay and Villy. The vines are between 18 and 48 years old. The soil originates from the late Jurassic period. The organically cultivated vineyards are located on slopes from the Kimmeridgian and Portlandian plateaus, and consist mainly of clay and limestone.

Winemaking

Vinification is done entirely by gravity. Fermentation starts spontaneously with indigenous yeasts. The wine ages for 9 months in stainless steel tanks.

Domaine de l'Enclos werd in 2016 opgericht door de broers Romain en Damien Bouchard, maar hun wijnverhaal begon al veel vroeger in het familiebedrijf. Na jaren ervaring en een eerste eigen project besloten ze hun droom waar te maken met een zelfstandig domein. Vandaag beheren ze bijna 30 hectare wijngaarden, waaronder enkele prestigieuze Grand Cru- en Premier Cru-percelen in Chablis.
