Vineyard
The Chardonnay grapes come from plots with a subsoil of calcareous clay. The Savagnin grapes originate from the typical Marne Bleu with marl, lime, and loam.
Winemaking
Both grape varieties are hand-picked but undergo completely different vinification processes. The Chardonnay matures for 15 months in large foudres using the ouillage technique. The Savagnin grapes undergo oxidative aging in small oak barrels for 18 months, without ouillage, which creates a natural protective layer on top of the juice that slowly sinks in the barrel due to liquid evaporation. After blending, fining, and light filtration, the wine is bottled.

Het verhaal van Domaine Désiré Petit begint in 1932 in het Jura-dorp Pupillin, de historische bakermat van de Ploussard. Sindsdien groeide het familiedomein uit van 1,5 naar 27 hectare, verspreid over de appellaties Arbois, Côtes du Jura en Château-Chalon. Vandaag leiden Damien en Anne-Laure Petit het domein, waar traditie en innovatie hand in hand gaan en de rijke wijncultuur van de Jura alle ruimte krijgt.
