The vineyards are located in the Atlantic climate of the Lisbon region, where cool sea breezes provide freshness and aromatic tension in the grapes. The Vital grape is an old local variety that was historically important in this region. The grapes are grown organically without the use of pesticides. Due to the proximity of the ocean, the grapes maintain good acidity despite the late harvest. The wine represents a modern interpretation of this traditional Atlantic grape.
Winemaking
The grapes are harvested late and picked by hand. Fermentation occurs spontaneously with indigenous yeasts in rough chestnut barrels. This choice lends a subtle spiciness and extra texture to the wine. After fermentation, the wine ages for a further nine months in the same uncoated chestnut barrels. Only a minimal amount of sulphite is added (<15 ppm) for stability.
