Vineyard
IXSIR's plots are spread over a large area, ranging from Jezzine in the south to Batroun in the north. Between these points, the vines grow on the most beautiful slopes of the Beqaa Valley, at altitudes between 400 and 1,800 metres above sea level, making them the highest vineyards in the northern hemisphere. The subsoil primarily consists of calcareous clay in plate-like formations, and the soil is very rocky and stony.
Vinification
The hand-picked grapes are transported to the winery in small 18 kg crates, ensuring that the temperature of the grapes remains below 18°C to preserve their freshness. The different grape varieties are vinified separately. The wine matures for 6 months in French oak barrels, 60% of which are new and 40% second-use.
