Vineyard
The grapes come from southeast and east-facing vineyards in Caubeigt and Tauzy, located at an altitude of approximately 300 meters. In Caubeigt, the vines thrive on clay and loam soil. The steeply rising slope (up to 30%) makes cultivation challenging. In Tauzy, the vineyard has a maximum gradient of 27%, only a fraction less steep. The iron-rich soil with many pebbles and gravel consists here of loam and clay. Near the top, you'll find large round boulders. The vines are 7 to 43 years old. The combined yield is 40 hl per hectare.
Winemaking
The grapes are hand-picked and undergo a very strict selection. The grapes are not crushed and undergo direct pressing, which is done gently and slowly. Fermentation starts with indigenous yeasts. Half of the aging on the lees takes place in stainless steel tanks, supplemented by wooden barrels of various sizes.
