Vineyard
The grapes for this Brunello come from two locations: the 2.5-hectare San Polino vineyard near Castelnuovo dell’Abate, southeast of Montalcino, situated between 400 and 450 metres above sea level, and a vineyard in the north of Montalcino. The latter, partly due to its lower elevation of about 350 metres above sea level, has a slightly warmer microclimate than the San Polino vineyard. Both plots benefit from a cool breeze originating from Monte Amiata. As a result, the bunches tend to be on the smaller side, but with very healthy grapes. The soil of the smaller vineyard consists of a mixture of sandy loam with a large proportion of stones and rocks; furthermore, we find marl, clay, fragmented slate, red ferrous earth, and many mineral deposits. The other plot has a greater proportion of sand and marl. The vineyards are cultivated entirely biodynamically, and a rich biodiversity in and around the vineyards ensures healthy microbiological life. There are approximately 5,000 vines per hectare.
Vinification
The hand-picked grapes are transported in small 10 kg crates to the estate where they are destemmed. After a light crushing, a cold maceration of 72 hours follows in wooden vats, with the temperature kept below 12 °C. Fermentation is initiated with indigenous yeasts and takes place in conical Slavonian oak vats, with the temperature rising to 28-35 °C. The wine then remains in contact with the skins for another 30 days. During fermentation, the pigeage technique is applied, and the juice is regularly pumped over. No sulfites are added during vinification. The wine ages for 42 months in large Slavonian oak barrels of 2,600 to 3,800 litres.

Azienda San Polino
