Vineyard
The grapes for this Riserva come exclusively from the Castelnuovo dell’Abate vineyard, located in the Val d’Orcia, between Montalcino and Monte Amiata. This south-facing plot above the Ribusuoli river measures only 2.5 hectares and lies between 400 and 450 metres above sea level. The soil consists of a mixture of sandy loam with a large proportion of stones and rocks, as well as marl, clay, crumbled slate, red iron-rich earth, and many mineral deposits. A cooling breeze from Monte Amiata provides sufficient ventilation, significantly reducing the risk of diseases and fungi. And by its cooling effect, this wind also ensures fresher wines in hot Tuscany. There are approximately 5,000 vines per hectare.
Vinification
The hand-picked grapes are transported in small 10 kg crates to the domain, where they are destemmed. After a light crushing, a cold maceration of 72 hours follows in conical wooden vats, with the temperature kept below 12 °C. Fermentation is initiated with indigenous yeasts and takes place in conical Slavonian oak vats, with the temperature rising to 30 °C. The must is pumped over daily to ensure better extraction. A delestage is performed twice to remove the seeds and prevent unwanted bitterness from leaking into the wine. This also provides the natural yeasts with sufficient oxygen, ensuring a fast and even fermentation. The wine remains in contact with the skins for 45 days, with malolactic fermentation completed by the end of November. No sulfites are added during vinification. Afterwards, the wine rests for 6 months in barriques, undergoing daily bâtonnage. Finally, the wine matures for 48 months in 28 hl Slavonian oak vats. Production amounts to 4,800 bottles.

Azienda San Polino
