The majority of the grapes for this exclusive Brunello come from their 2.5-hectare Castelnuovo dell’Abate vineyard, located in the Val d’Orcia, between Montalcino and Monte Amiata. It is cultivated entirely biodynamically, with the rich biodiversity in and around the vineyard ensuring healthy microbial life. The complex soil, formed in the late Miocene, consists of a mixture of sandy loam with a large proportion of stones and rocks, as well as marl, clay, fragmented slate, red iron-rich earth, and many mineral deposits. A valley wind provides some cooling on the steep, south-facing slopes of the plots, which are situated at an altitude of 400 to 450 meters. The grapes come from the oldest vines, which are 22 years old. There are approximately 5,000 vines per hectare. A small portion of the grapes come from the best vines of their other vineyard north of Montalcino.
Vinification
The hand-picked grapes are transported in small 10 kg crates to the estate, where they are destemmed. After light crushing, a 72-hour cold maceration follows in wooden vats, with the temperature kept below 12 °C. Fermentation is initiated with indigenous yeasts and takes place in conical Slavonian oak vats, where the temperature rises to 28-35 °C. The wine then remains in contact with the skins for another 40 days. During fermentation, the pigeage technique is applied, and the juice is regularly pumped over. No sulfites are added during vinification. The wine first matures for 6 months in French barriques, where the bâtonnage technique is applied. This is followed by further aging for 36 months, 10% of which is in 225-liter French oak barrels and 90% in a large Slavonian oak vat. Annual production is approximately 3,000 bottles.

Het kleine domein San Polino, dat oorspronkelijk slechts 2,5 hectare aan wijngaarden bezat, ligt op een heuveltop in de Podernovi subzone, op slechts enkele kilometers van Montalcino. Het prachtige sterk glooiende landschap wordt gedomineerd door de uitgestorven Monte Amiata vulkaan. Het produceert sinds een 20-tal jaren uitstekende Rosso, Sant'Antimo en Brunello wijnen die allen met de Sangiovese druif zijn gemaakt, en dit volledig biodynamisch! Katia Nussbaum en Luigi Fabbro (Gigi voor de vrienden) kochten dit domein in 1990 en verkregen in 1996 de toestemming van de overheid om wijn te verbouwen. Naast wijn produceren ze ook olijfolie. Ondertussen hebben ze 10 hectare in hun bezit, waarvan 7 hectare met oude Sangiovese stokken en 3 hectare nieuwe wijngaarden die ze recent zelf hebben aangeplant. Maar dit blijft natuurlijk nog steeds een kleinschalig project waarbij zeer intensieve arbeid vereist is. Bij San Polino zijn ze er rotsvast van overtuigd dat je enkel een onvervalste DOCG kan maken als er veel aandacht uitgaat naar een gezonde bodem waarop, in dit geval, de Sangiovese druif optimaal kan groeien. De wijngaarden werden hier nog nooit met pesticiden, herbiciden en chemicaliën behandeld en er wordt ook aan permacultuur gedaan (wetenschap voor het ontwerpen van de menselijke leefomgeving op een manier die ecologisch duurzaam en economisch stabiel is).
