Vineyard
The grapes come from 4 plots totalling 1.27 hectares in Fourchaume in the north of Chablis. The lowest plot is still quite flat, the other plots are on the flank. The soil originates from the slopes of the Kimmeridgian and consists of a mixture of marl, clay and limestone. The western orientation ensures that the vineyard maximises the afternoon sun, resulting in a rather warm terroir. These are mostly old vines, some of which are 70 years old.
Winemaking
The grapes are hand-picked. Vinification is done entirely by gravity. The bunches are cooled upon arrival at the winery and are immediately pressed. Fermentation starts spontaneously with indigenous yeasts and takes place at 16-17 °C. The wine matures for 16 months in oak barrels of varying ages. Annual production is a small 5,000 bottles.

Domaine de l'Enclos werd in 2016 opgericht door de broers Romain en Damien Bouchard, maar hun wijnverhaal begon al veel vroeger in het familiebedrijf. Na jaren ervaring en een eerste eigen project besloten ze hun droom waar te maken met een zelfstandig domein. Vandaag beheren ze bijna 30 hectare wijngaarden, waaronder enkele prestigieuze Grand Cru- en Premier Cru-percelen in Chablis.
