Vineyard

The vineyard covers about 30 hectares on the famous gravel ridges of Pessac-Léognan. The soil consists of deep gravel deposits with clay and sand in the subsoil, ideal for Cabernet Sauvignon. The average age of the vines is over 35 years. Thanks to the excellent drainage, the grapes develop great aromatic concentration while retaining freshness. The terroir of Haut-Bailly is known for its combination of power, elegance, and mineral refinement.

Vinification

The grapes are harvested by parcel and vinified separately. Fermentation takes place in temperature-controlled stainless steel and concrete vats to maintain maximum precision. After malolactic fermentation, a strict selection of the best batches for the Grand Vin follows. The wine then matures for approximately 18 months in French oak barrels, a significant portion of which is new wood. The result is a wine of exceptional finesse, concentration, and elegance.
