Vineyard

The vines thrive on stony, gently sloping soil that was formed by alluvial deposits from the Garonne in the Quaternary period. These sediments, consisting of sandstone, gravel, and clay, lie on a limestone substrate. This poor soil has good natural drainage. This forces the roots to dig deep to find sufficient nutrients, leading to a rich and complex wine. The vines in this 40-hectare vineyard are on average 35 years old and yield 38 hl per hectare. 45% of the harvest is used for this cuvée, mainly from the oldest vines. No herbicides are used, and great attention is paid to the micro-life in the soil.

Vinification

The bunches are picked by hand and transported in small 10 kg crates to the winery. There, they are destemmed, after which fermentation and maceration begin. These processes take place between 26 and 28 °C and last for 4 weeks. The pigeage technique is applied here. Maturation takes 14 months and occurs for about 30 to 35% in new barrels. Malolactic fermentation also takes place during this time.
