Vineyard
The grapes come exclusively from vineyards classified as Vertus Premier Cru. The vines are on average around 50 years old and thrive on chalky clay and chalk soils. The plots, located halfway up the hillside, have a south, southeast, or east orientation.
Winemaking
The grapes are hand-picked. They undergo a gentle pressing upon arrival at the winery. The spontaneous fermentation, initiated by indigenous yeasts, is followed by a 7-month maturation on lees in small oak barrels. Only a very limited amount of sulphites is added during vinification. It matures for at least 5 years in the bottle in the domain's cellars. It receives a dosage of 3 grams per litre.
