Appeal - Côte des Blancs: Vertus
Vineyard
Most of the grapes come from vineyards classified as Vertus Premier Cru. Additionally, the Chardonnay and Pinot Noir grapes also come from some Premier Cru plots just outside Vertus. The vines are on average about 40 years old and thrive on a terroir of brown soil and chalk. The plots are oriented south, southeast, or east.
Winemaking
The grapes are hand-picked. They undergo a gentle pressing upon arrival at the winery. Part of the Pinot Noir undergoes a 'red' vinification, while the other part is vinified as a white wine. The spontaneous fermentation, initiated by indigenous yeasts, is followed by 7 months of aging on the lees. Only a very limited amount of sulphites is added during vinification. Most of the reserve wines are stored in wooden barrels until blending. This Champagne ages for at least 4 years in the bottle. The dosage is only 0.75 grams per litre.
