Vineyard
Most of the grapes come from vineyards classified as Vertus Premier Cru. Additionally, the Chardonnay and Pinot Noir grapes also originate from several Premier Cru plots just outside Vertus. The vines are on average about 40 years old and thrive on a terroir of brown earth and chalk. The plots are oriented south, southeast, or east.
Winemaking
The grapes are hand-picked. They undergo a gentle pressing upon arrival at the winery. A portion of the Pinot Noir undergoes a 'red' vinification, and the other part is vinified as white wine. The fermentation, which starts spontaneously with indigenous yeasts, is followed by a 7-month maturation on lees. Only a very limited amount of sulfites is added during vinification. Until blending, most of the reserve wines are stored in wooden barrels. This Champagne ages for at least 4 years in the bottle. The dosage is only 0.75 grams per liter.
