After extremely rigorous manual sorting, the undamaged grapes are transferred to traditional granite lagares. Here, traditional foot-treading takes place to gently extract maximum colour and tannins. Alcoholic and malolactic fermentation are closely monitored. This monumental wine then matures for 16 to 18 months in French oak barrels (a large proportion of which are new). The wine is bottled unfiltered to preserve its full structure and ageing potential.
Vinification
This absolute top wine comes exclusively from the estate's oldest plots (Vinhas Velhas), with vines over 60 years old. Their roots are deeply embedded in the pure slate (schist), which gives the wine its fabulous concentration and minerality. Yields are extremely low, often less than one bottle per vine. The plots are located on the steepest, manually maintained terraces of the Cima Corgo. The 2015 vintage is considered one of the most legendary and balanced vintages of this century.
