The grapes come from over 40-year-old vines in the Jungfer, Schönhell, and Würzgarten vineyards in Hallgarten. The soil consists of pebbles and phyllite, a metamorphic rock. Due to the slightly higher altitude of the vineyards, there is a long ripening cycle here.
Winemaking
The bunches are hand-picked and whole-bunch pressed upon arrival at the winery. Fermentation is initiated by naturally occurring yeasts. It remains in contact with the gross lees in large oak barrels until the end of March. This is followed by further aging on fine lees until August. It contains 3.9 grams of residual sugar per liter.
