Vineyard
The grapes come from south-eastern and eastern-facing vineyards in Caubeigt and Tauzy, located at an altitude of approximately 300 meters. In Caubeigt, the vines thrive on a clay and loam soil. The steep incline (up to 30%) makes cultivation challenging. In Tauzy, the vineyard slope is only slightly less steep, with a maximum gradient of 27%. The iron-rich soil here, with many pebbles and gravel, consists of loam and clay. Near the top, large round boulders can be found. The vines are between 7 and 43 years old. The combined yield is 40 hl per hectare.
Winemaking
The grapes are hand-picked and undergo a very strict selection. The grapes are not crushed and are immediately pressed, gently and slowly. Fermentation starts with indigenous yeasts. Half of the ageing on the lees takes place in stainless steel tanks, supplemented with wooden barrels of various sizes.

Op 11,5 hectare, met uitzicht op de Pyreneeën, zet Franck Lihour de familietraditie verder. Het domein focust volledig op de karaktervolle druivenrassen die deze historische appellatie wereldwijd bekend hebben gemaakt.
