Vineyard
The Malbec grapes come from the slopes of 'Bru' and from two different terroirs: 50% from the 'Tran', a conical slope with scree consisting of limestone, the other half of the grapes come from the high terraces of Mindel consisting of gravelly clay, this rich soil contains many large round pebbles. The 35 to 45-year-old vines yield 28 hl per hectare, with less than 0.5 kg of grapes per vine.
Vinification
The bunches are destemmed upon arrival at the winery. This is followed by fermentation and maceration, which together last 40 days. Alcoholic fermentation takes place at a temperature of 28 °C and the pigeage technique is applied at the beginning of it. Malolactic fermentation and 24 months of aging take place in a mix of 500-liter French oak barrels and large foudres. No sulfites are added during vinification. It is bottled unfiltered, with only a very minimal amount of sulfites used.

Château du Cèdre
Frankrijk · Sud-Ouest
