Vineyard
The vineyards are planted on clay-sandy soils covered with rounded river stones. Work in the vineyard is carried out in the traditional way, with the utmost respect for the terroir, to promote biodiversity and allow the grapes to fully express their character. Thanks to this approach, some of our vines, more than a hundred years old, continue to stand the test of time and still produce grapes of exceptional quality.
Vinification
The harvest is done by hand, followed by traditional vinification with 70% destemming, three days of cold maceration, two punch-downs and pump-overs per day, 20 days of skin maceration, and 12 months of aging in second-use oak barrels.
