Vineyard
The grapes come from a tiny vineyard of only 70 ares overlooking the Loire. The Cabernet Franc vines on this plot in Dampierre sur Loire were planted as early as 1904! The soil consists of flint and limestone, which were formed during the Turonian era. Work in the vineyard is done organically and biodynamically.
Vinification
The organically grown grapes are hand-picked and transported in small crates to the winery. Upon arrival, a second selection takes place. The grapes are conveyed to the cellar on a vibrating belt to prevent premature crushing and associated oxidation. Fermentation occurs in open 45 hl concrete vats at a temperature of 16 to 22 °C to achieve maximum extraction of aromas and richness. At the end of fermentation, the temperature rises to 24 °C.

Roches Neuves kreeg in 1992 een nieuw hoofdstuk toen Thierry Germain zich in Saumur vestigde. De historische wijngaarden, waarvan sommige teruggaan tot 1850, waren voordien eigendom van Denis Duveau. Dankzij de inspirerende vriendschap met Charly Foucault van Clos Rougeard groeide Thierry uit tot één van de grote voortrekkers van de biodynamische wijnbouw in de Loire. Sinds 2004 werkt het domein volledig volgens deze filosofie.
