Vineyard
This wine comes from a vineyard planted 100% with Listán Blanco grapes. The vineyard consists of two plots with 30-40 year old vines, located at an altitude of 650-750 meters. The vineyard soils are mainly volcanic sand and clay.
Winemaking
After manual harvesting, the grapes are carefully destemmed and then gently pressed using a pneumatic press. The resulting juice ferments in stainless steel tanks for 10-12 days, with the temperature carefully controlled. Following fermentation, the wine is aged for 6 months in the same stainless steel tanks, remaining in contact with the lees. During this time, the wine is occasionally gently stirred. The wine is bottled without filtration or the addition of extra sulfites.
