Vineyard
The grapes come from vineyards in San Marcello, planted in 2015 at an altitude between 230 and 250 meters above sea level. The soil consists of calcareous clay with a fraction of sand, which provides freshness and tension in the wine. The vines are organically certified and grown according to the Guyot system with a classic cordon structure. The harvest is done entirely by hand, with only perfectly healthy bunches selected. This meticulous approach guarantees a pure expression of terroir and grape.
Vinification
The wine is made from perfectly healthy grapes that spontaneously ferment with indigenous yeasts in large 2000-litre conical oak vats. Intervention is kept to a minimum: no fining, no filtration, and only a minimal addition of sulfites (less than 40 mg/l total). After alcoholic fermentation, the wine ages for three months in stainless steel, followed by at least three months of bottle rest before bottling. The result is a vibrant, pure wine that focuses on energy, fruit, and authenticity, free from unnecessary technical manipulation.
