Vineyard
The Carignan vines were planted in 1918 and are among the oldest on the estate. They are located on a chalky plateau with clay-limestone soils and a small presence of Grenache complanté. Yields are extremely low (±20 hl/ha), which ensures concentration and depth. Everything is harvested manually with great care for selection and ripeness.
Vinification
Le Pilou is made from a strict parcel selection of Carignan with immediate and careful vinification to maximally preserve the character of the grape. Fermentation occurs spontaneously with natural yeasts. The wine then matures for 18 months in sandstone amphorae (jarres en grès), which provides micro-oxidation without wood influence. This results in a pure, unfiltered expression of fruit and terroir with added texture.

In het ruige, zonovergoten landschap van Calce, waar de Middellandse Zee, de Pyreneeën en de Corbières elkaar raken, vinden we het domein van Olivier Pithon. Zijn verhaal begint echter niet hier, maar in Anjou, waar hij als kind al werd ondergedompeld in de wereld van wijn door zijn grootvader en zijn broer, wijnbouwer Jo Pithon. Wat begon als jeugdige fascinatie, groeide uit tot een roeping. Op zijn veertiende werkte Olivier al in de wijngaarden en op zijn achttiende trok hij naar Bordeaux om zijn opleiding voort te zetten. Daar en tijdens stages in onder meer Jurançon en Beaujolais ontwikkelde hij zijn technische kennis. Maar het was pas tijdens zijn jaren in Saint-Émilion, en vooral door zijn ontmoeting met Stéphane Derenoncourt, dat zijn visie op wijn fundamenteel veranderde. Niet techniek, maar gevoel. Geen dogma, maar plezier. Wijn als expressie van lichtheid, balans en emotie. In 2000 besloot hij zijn eigen weg te gaan. De zoektocht naar een plek eindigde vrijwel onmiddellijk in Calce. Wat volgde, leest als een sprookje: binnen één maand ging hij van werkloos naar eigenaar van 8,5 hectare oude wijnstokken. Op 3 januari 2001 begon het avontuur, met oude Carignanstokken uit 1940, een snoeischaar in de hand en een uitzicht dat tot aan de Middellandse Zee reikt.
