Vineyard
The grapes come from a total of 6 hectares of vineyards that are cultivated entirely organically. The soil is mechanically worked and has natural vegetation. The orientation of the various plots is north, southwest, and east. The soil consists of sandstone, marl, clay, and limestone. The vines are on average 25 years old, with the Carignan vines being somewhat older at 30-35 years. The yield is 20 hl per hectare. There is no green harvesting, and there are approximately 4,000 vines per hectare.
Vinification
The grapes are hand-picked and rigorously selected. Maceration and fermentation take place over 15 days in open vats, with care taken to avoid over-extraction. All processes in the cellar are gravity-fed. The wine matures for 12 months on lees in a mix of 30 hl foudres, 12 hl muids, and 6 hl demi-muids. This is followed by a further 6 months of aging in stainless steel tanks. The wine is lightly filtered before bottling.

Domaine Roc d'Anglade

Roc d’Anglade in Langlade is het geesteskind van Rémi Pédréno. Dit kleine dorp met zo’n 2,000 inwoners in de Gars nabij Nîmes kent een rijke wijngeschiedenis. Reeds in 936 werd hiervan een eerste geschreven melding gemaakt. Op het einde van de 17e eeuw werden de wijnen uit Langlade aan het hof van Louis XIV geserveerd. De wijncultuur bereikte zijn hoogtepunt in de 19e eeuw met maar liefst 165 wijnboeren die samen 625 hectare wijngaarden bewerkten, dit is een enorm aantal als je dit in perspectief plaatst ten opzichte van het slechts 9 km² grote dorp. De wijnbouw was zo belangrijk dat zelfs de volledige lokale economie enkel hierop draaide : de dorpelingen die niet in de wijngaarden actief waren maakten de wijnvaten. Maar zoals op zoveel plaatsen kwam aan deze weelde een abrupt einde door de Phylloxera plaag.
