Vineyard
The grapes for the Rosso di Montalcino come from various plots on the San Polino estate that are not classified for making Brunello di Montalcino. However, they do share the same complex soil structure of stony sandy loam, marl, and clay. Parts of the soil turn red, a phenomenon known as Terra Rossa. The Rosso is cultivated with as much care as the Brunello, but there are some differences: more buds are left on the vines and less green growth is pruned away, resulting in fruitier grapes with thinner skins.
Vinification
The organically grown grapes are exclusively hand-picked and transported in small crates to the winery. After a cold maceration at 12 °C for about 3 days, fermentation begins, initiated solely by the use of indigenous yeasts. The total vinification process is slightly shorter than for their Brunello, as these grapes have a slightly thinner skin. After fermentation, an additional 21-day maceration follows. After 6 months of barrel aging, there is a further 6 months of aging in stainless steel tanks.

Het kleine domein San Polino, dat oorspronkelijk slechts 2,5 hectare aan wijngaarden bezat, ligt op een heuveltop in de Podernovi subzone, op slechts enkele kilometers van Montalcino. Het prachtige sterk glooiende landschap wordt gedomineerd door de uitgestorven Monte Amiata vulkaan. Het produceert sinds een 20-tal jaren uitstekende Rosso, Sant'Antimo en Brunello wijnen die allen met de Sangiovese druif zijn gemaakt, en dit volledig biodynamisch! Katia Nussbaum en Luigi Fabbro (Gigi voor de vrienden) kochten dit domein in 1990 en verkregen in 1996 de toestemming van de overheid om wijn te verbouwen. Naast wijn produceren ze ook olijfolie. Ondertussen hebben ze 10 hectare in hun bezit, waarvan 7 hectare met oude Sangiovese stokken en 3 hectare nieuwe wijngaarden die ze recent zelf hebben aangeplant. Maar dit blijft natuurlijk nog steeds een kleinschalig project waarbij zeer intensieve arbeid vereist is. Bij San Polino zijn ze er rotsvast van overtuigd dat je enkel een onvervalste DOCG kan maken als er veel aandacht uitgaat naar een gezonde bodem waarop, in dit geval, de Sangiovese druif optimaal kan groeien. De wijngaarden werden hier nog nooit met pesticiden, herbiciden en chemicaliën behandeld en er wordt ook aan permacultuur gedaan (wetenschap voor het ontwerpen van de menselijke leefomgeving op een manier die ecologisch duurzaam en economisch stabiel is).
